Ingredients

1 roasted chicken, or equivelent picked over and torn into bite sized pieces

1 cut seedless red grapes cut in halves

1-2 green onions sliced thin

1/2 cup dried cranberries

1 ripe apricot diced

Juice of one lemon

1 tablespoon lemon zest

1 1/2 tablespoons organic canola mayo

1 1/2 tablespoons whole grain mustard

Fresh ground pepper to taste

1 cup organic raw walnut halves

Preparation

Mix it all together, except walnuts, seal tight and leave in fridge for about 2 hours. Serve with walnuts.
