Ingredients

3 large gushy ripe bananas

1 egg

2 Tb vegetable oil

1/4 cup milk

1/4 cup sugar

1 tsp salt

1 tsp baking soda

1/2 tsp baking powder

1 1/2 cups flour

1/2 cup wheat germ (optional)

Preparation

  1. Preheat oven to 350°.

  2. Grease 9" loaf pan OR 12 muffin tins.

  3. In a large bowl, thoroughly smash bananas with a fork.

  4. Beat in egg, oil, milk, sugar and salt. Stir in baking soda and powder (it will start foaming).

  5. Measure in flour and wheat germ if used. Mix quickly with coarse whisk or spoon. A few unmixed dots of flour are fine.

  6. Turn into loaf pan OR muffin tins.

  7. Bake for 45 minutes (loaf), 25 minutes (muffins). Toothpick should come out clean.

  8. Cool and enjoy. Disappears in about 10 minutes in my house.
