Ingredients

1# boneless lean pork

1# shelled deveined medium shrimp

6 water chestnuts

2t ginger

2T oyster sauce

2t soy sauce

1T Chinese rice wine

1t brown sugar

2t sesame oil

2T corn starch

Freshly ground white pepper, to taste

Wonton wrappers, as needed

Preparation

  1. In food processor, process ginger, sugar, oyster sauce, soy sauce, rice wine, and sesame oil and process till ginger is finely minced

  2. Add shrimp to food processor bowl, and process in 1-sec pulses until shrimp is coarsely chopped

  3. Stir vigorously shrimp mixture with ground pork and corn starch in large bowl until mixture begins to resemble a sticky paste.

  4. Wrap in won ton skins.
