Ingredients
9 fresh large, juicy plumms, unpeeled, sliced
2 cups honey
2 tbsp ground cinnamon
2 boxes pound cake mix
6 eggs
3/4 cup olive oil
3/4 cup cream
unflavored, non stick cooking spray
powdered sugar
Preparation
Preheat oven to 300 degrees F Heat honey, add cinnamon and boilf ro 5 minutes. Add plums and return to boil.Reduce heat to low.Simmer to get the plums soft. Place cake mixes in large bowl. Make a well in the center.Add eggs, oil and water. Beat on high until smooth. Spray large tube pan with cooking spray. Pour 2 inched batter into pan. Place 1/3 of plums on the batter. Pour 1 1/2 " layer batter over plums. Add 1/e of plus in an even layer and batter in an even layer . Stop 1/2 " from top. Place cake into oven and bake until set and light golden, aboout 1 -12/ hours. Cool the cake. Invert cake onto platter. Surround any leftover plums around the cake. Carefully spoon the honey syrups over the cake until saturated. Dust the cake with powdered sugar
