Ingredients
Dressing:
1/2 cup plain yogurt
1/2 cup reduced fat sour cream
1/4 cup extra virgin olive oil
1 large jalapeno pepper, seeded and finely chopped
1 clove garlic, minced
1 teaspoon sea salt
1 teaspoon freshly ground cumin
1/4 teaspoon liquid smoke flavoring
1/4 cup cilantro leaves, coarsely chopped
Salad Ingredients:
1 pound fresh peas
1 1/2 cups cold, cooked rice
1 pound smoked Wisconsin cheddar cheese, cut into 1/2 inch cubes
1 pound smoked ham, cut into 1/2 inch cubes
1 medium red onion, coarsely chopped
Garnish: 3 Tablespoons chopped cilantro leaves
Preparation
Put all dressing ingredients in blender; combine until well mixed. Combine all salad ingredients in a large bowl; top with dressing and toss well. Top with cilantro and chill, covered, until ready to serve.
