Ingredients

1/2 c. cooked winter squash

2 small cans albacore tuna in water, drained

1/2 c. breadcrumbs, divided

1 egg

2 T. light mayonnaise

1 rib celery chopped

1 small onion sliced into thin rings

salt and pepper or seasoned salt to taste

Preparation

In a bowl mix together the squash, tuna, 1/4 c. breadcrumbs, egg, mayonnaise, and celery. Season with salt and pepper.

Form four patties, press onion rounds into one side and sprinkle with breadcrumbs.

Either saute until both sides are brown or use a panini press.

Optional: Top with slices of cheddar or any other sharp flavored cheese.
