Ingredients
4tbls olive oil
1 medium white onion chopped
1 medium butternut squash seeded and cubed
1 large sweet potato peeled and cubed
5 medium carrots peeled and chopped
5 medium courgettes peeled and sliced
2 ripe tomatoes grated
3 cloves garlic crushed
3 bay leaves
1/4 tsp turmeric or 1 tsp hawwaij for soup
1tsp cumin seeds
1tbls ground cumin
1 tsp ground cardamom
1 tsp fennel
4 -6 cups chicken flavoured stock (Ina Paarman)
salt to taste (Herbamare)
1 tsp sugar or fructose
1 bunch coriander chopped finely
Preparation
heat oil over medium flame in a soup pot (not too large) sautee onion and add all the spices making sure not to burn them. To this add all the veg and the grated tomato. Cover with stock, and bring to the boil. Lower heat and simmer for about 1/2 hour.Add grushed garlic. Adjust flavour by adding salt and sugar and just before serving mash the veg and add the coriander
