Ingredients
1 lb lentils rinsed and drained
8 C water
4 medium carrots, sliced
1 medium onion, diced
½ bunch of celery (cut off the top and bottom and use the rest)
fresh cut ginger (to taste)
2 tbsp celery salt (to taste - depending on how salty you like it)
2 tsp red curry paste
2 tsp fresh cracked peppercorn
Preparation
Add all ingredients to crock pot. Cook for approximately 4-5 hours. Do NOT blend lentils (it changes the texture, I like mine chunky. If you like it smooth, blend away.)
Also can be served with rice.
