Ingredients

8 oz Heirloom Cherry Tomatoes (halved)

1/4 Medium White Onion (chopped)

2 cups Fresh Baby Spinach

2 tsp. Olive Oil

Juice of 1 1/2 Lemons

1/2 tsp. Dried Sweet Basil

1/2 tsp. Salt

1/2 tsp. Pepper

Preparation

Combine tomatoes and onion in medium bowl add lemon juice, olive oil, salt, and pepper. Heat medium saucepan on medium heat. Add 2 more tsp. of olive oil. Add spinach and tomato, onion mixture. Saute until spinach is wilted and onions are slightly brown.
