Ingredients

1 bunch of spinach or a bag of baby spinach, rinsed and drained, tough stems removed, very coarsely chopped.

2-3 dates chopped into 1/4 inch dice. (the dice stick together but separate easily when added to the pan)

1 TB olive oil

1 TB butter (zero cholesterol substitutes work fine)

Preparation

Heat butter and olive oil over moderate heat in a medium skillet. Add the dates and saute, separating pieces and cook about 2 minutes. Add the spinach and cook until just wilted. About 1 minute. Serve immediately.
