Ingredients

2 strips thick-cut bacon, diced

1/2 medium onion, sliced thin

1/4 tsp. salt

2 9-oz. bags baby spinach

Preparation

In a large nonstick skillet, fry the bacon over medium-high heat until crisp, about 8 minutes. Remove the bacon bits and set aside, reserving the fat in the pan.

Add the onions and the salt and reduce the heat to medium-low. Cook, stirring occasionally, until the onions have softened completely and turned brown, about 20-30 minutes.

Increase the heat to high, add the spinach and bacon bits and cook, stirring frequently, just until the spinach has wilted, about 5 more minutes. Add additional salt to taste and serve immediately. Refrigerate any leftovers.
