1-2 Eggplants skin and puree

1 can Tomato paste (6oz)

1/2 Onion Chopped (Fine)

1/2 Glarlic Clove (minced)

2Tbsp Sunflower Oil

1tsp Ground Corriander Seed

1/2 tsp Ground Fennel Seed

1 Green Chili (Minced)

1tsp Red Cayanne Pepper

1tsp Paprika

1tsp Ground Ginger

1 cup Dried Cherries (pitted)

1 Cup Green Peas (reserve)

1/2 Cup Grape Leaves (wet)

Preparation

  1. Prepare Rice
  2. Prepare Eggplant Curry (that is all other ingredients except rice and green peas)
  3. Compine Eggplant Curry, Peas and Rice
