Ingredients
1 cup uncooked wild rice
2-1/4 chicken stock
1 cup craisins
1/4 cup vegetable oil
1 tsp salt
1 cup sliced almonds, lightly toasted
1 tsp grated orange zest
1/3 cup fresh orange juice
Freshly ground black pepper to taste
Preparation
In a large saucepan, combine the rice with the chicken stock. Bring to a boil. Reduce the heat and simmer uncovered 20-30 mins. The rice should be tender but not mushy. Remove from heat.
Add the craisins, oil, salt, almonds, orange zest and juice and black pepper. Refrigerate for about 2 hours. Bring to room temperature and serve.
