Ingredients

1/2c Olive Oil

2tbs. minced garlic

1/4c diced onion

1c white wine

6c sliced fresh shiitake,cremini, portabello any combo.

2c heavy cream

3tbs. fresh thyme leaves

salt and freshly ground pepper

10 Basic Tamales

fresh black truffles

Preparation

  1. In a sauce pan over medium heat, heat the olive oil and sweat the galic and onion for 2 minutes. Add the wine, raise the heat to hi and reduce for 10min to about 2 TBS.

2.Lower heat to medium, add mushrooms, cook 5-7 min. until softened. Raise heat to hi, add cream, and bring to a boil. Reduce heat to medium and simmer for 15 minutes. Remove from the heat, add the thyme, season to taste with salt and pepper
