Ingredients

1/2 cup butter

6 cups mushrooms, diced 1/2"

3/4 cup sliced green onions

salt and pepper to taste

2 cups butter

4 1/2 cups fresh breadcrumbs

1 1/2 cups whole grain yellow cornmeal

1/3 cup minced fresh parsley.

Preparation

melt1/2 cup butter butter, saute mushrooms for 4 minutes. Stir in green onions and strain into large bowl. discard liquid. Melt 2 cups butter, add breadcrumbs, cornmeal and stir 10 minutes until mixture begins to color. Reduce heat to med low and stir until crisp and golden brown about 12 minutes. Drain thoroughly and add to mushroom mixture. Stir in parsley and serve warm.
