Ingredients

2 Medium Vine Ripened Tomatoes

1 Tbsp Balsamic Vinegar

2 Tsp Olive Oil

1 Tbsp Black Pepper

1 Cup Wild Arugula

1 Lb Fresh Mozzarella Presliced

1/2 Cup Sliced Basil

2 Mandarin Orange Fruit Cups in Light Syrup

Preparation

  1. Slice your Basil into ribbons

  2. Chop your slices of Mozzarella into quarters

  3. Drain Orange Fruit Cups into a bowl

  4. Cut Tomatoes into wedges

  5. In the orange juice bowl add the Balsamic Vinegar and whisk in Olive Oil

  6. Whisk for about 30 seconds or until dressing is emulsified

  7. Combine all your ingredients in a big salad bowl

  8. Plate, top with diced remaining Basil, drizzle 1 Tbsp Balsamic Orange Dressing over top

  9. Grind 1 1/2 tbsp Black Pepper, Serve!
