Ingredients
1 cup sugar
1 egg
1/2 cup softened butter
1 teaspoon vanilla
1/2 cup sifted cocoa
1/2 teaspoon salt
2 cups flour
1 cup buttermilk
FILLING
3/4 cup softened butter
1 cup confectioner’s sifted confectioner’s sugar
1 & 1/2 cups prepared marshmallow creme
2 teaspoons vanilla
1/4 teaspoon salt
Preparation
- Preheat oven to 375
- With an electric mixer, beat the sugar, egg, butter and vanilla until light and creamy. In another bowl, ,ix the cocoa, baking soda, salt and flour ; then blend with buttermilk into the creamed mixture.
- drop batter by heaping tablespoons or cookie scoop onto greased or parchment paper lined baking sheets and bake 7-9 minutes. Remove from baking sheets and cool on wire racks.
- To make the filling, combine all filling ingredients well.
- To assemble, saandwich a heaping tablespoon of cream between 2 cookies, dividing the cream evenly among the cookies.
