Ingredients

135g all-purpose flour

135g whole-wheat flour

1/4 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1.5 tablespoons sugar

2 whole eggs, beaten

2 T unsalted butter, melted

1 cup buttermilk, room temperature

Vegetable spray, for waffle iron

Preparation

Preheat waffle iron to highest setting.

Mix using the Muffin Method. Allow to rest for 5 minutes.

Using a #8 disher, scoop the batter onto the iron. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve. DO NOT STACK while warming.
