Ingredients

Starter:

1 cup flour

1 Tbsp yeast

pinch of sugar

1 cup warm water

Main Bread:

1/4 cup flaxseed

1/4 cup quinoa

1/4 cup millet

1/4 cup oats

2 cups whole grains

1 cup water

1 Tbsp oil

1 Tbsp salt

3 cups whole grain flour

2-3 cups flour

1/4 cup honey

Preparation

12-24 hours before soak and/or cook any whole grains/seeds you wish to add. Cover the seeds so there is one inch of water above them.

  1. Make the starter, let it rise and get gooey (10-20 minutes).

  2. Meanwhile, mix the other ingredients in a bowl. Once the starter smells yeasty, mix in with the rest of the ingredients and knead for up to 15 minutes.

  3. Let dough rest for 2 hours until doubled.

  4. Punch the dough down and form into loaves. Place the loaves into two well oiled bread pans and let it double again 45-90 minutes.

  5. Bake for 35-50 minutes at 350 degrees.
