Ingredients

1 ¼ cups whole wheat flour

1 teaspoon baking soda

½ teaspoon salt

pinch of nutmeg

¼ cup butter, at room temperature

1 cup Sucanat (sugar cane sugar)

3 large ripe bananas, mashed

2 eggs

½ cup chopped walnuts or pecans

Preparation

Preheat oven to 350 F. Spray inside of medium loaf pan completely. In a medium bowl stir together the flour, baking soda, salt and nutmeg. Set aside. In a large bowl beat together the butter and sugars until blended. Beat in the mashed banana and then beat in the eggs one at a time. Mixture will look curdled. Stir in the nuts. Add the dry ingredients and stir just until blended.

Pour into prepared pan. Bake for 60 minutes or until toothpick or cake tester comes out clean. Cool in the pan for 10 minutes. Turn out on a wire rack to cool completely.
