Ingredients
3 pounds mussels, cleaned and soaked with flour for 30 minutes
2 T butter
6 cloves garlic, chopped
1/2 yellow onion, chopped
1 stalk celery, thinly, sliced
red pepper flakes
1 to 1 1/2 cups good white wine
salt and pepper
6 T butter
lots of fresh chopped herbs
Preparation
- Saute onion, celery and garlic with 2 T butter until fragrant and softened. Add red pepper flakes, saute 30 seconds.
- Add mussels and white wine. Cook until mussels are opened, about 10 minutes or more.
- Add remaining butter and chopped herbs.
- Serve with bread.
