Ingredients

3 pounds mussels, cleaned and soaked with flour for 30 minutes

2 T butter

6 cloves garlic, chopped

1/2 yellow onion, chopped

1 stalk celery, thinly, sliced

red pepper flakes

1 to 1 1/2 cups good white wine

salt and pepper

6 T butter

lots of fresh chopped herbs

Preparation

  1. Saute onion, celery and garlic with 2 T butter until fragrant and softened. Add red pepper flakes, saute 30 seconds.
  2. Add mussels and white wine. Cook until mussels are opened, about 10 minutes or more.
  3. Add remaining butter and chopped herbs.
  4. Serve with bread.
