Ingredients

2/3 c. unsalted butter

2/3 c. brown sugar

2 large eggs

1 1/2 c. self rising flour

1 1/2 c. instant oatmeal – not cooked

1 tsp. baking soda

pinch of Kosher salt

1 tsp. vanilla

1 c. coarsely chopped walnuts

1 c. unsweetend flaked coconut

3/4 c. white chocolate chunks

1/2 c. semi-sweet chunks

1/4 c. mini-semi-sweet chips

Preparation

Preheat oven to 375

Beat butter and sugar together in a mixing bowl until light and fluffy. Add eggs one at a time. In another bowl mix together dry ingredients. Mix wet and dry ingredients together. Add vanilla.

In another bowl – from either wet or dry – mix together the chocolates, walnuts, coconut and cranberries. With a wooden spoon mix this bowl with cookie dough until all ingredients are distributed.

Using a large ice cream scoop drop sookies onto ungreased parchment paper lined cookie sheets.

Bake for 15 - 17 minutes depending upon your oven and how crisp you like the cookies.
