Ingredients

15 ounce can black beans, drained and rinsed

12 ounce can white corn, drained

4 ounce package crumbled feta

1 small bunch green onion, chopped

1/2 cup extra light olive oil

1/2 cup sugar

1/2 cup apple cider vinegar

1/2 cup fresh cilantro, chopped

Preparation

In a medium bowl, whisk olive oil, sugar, and apple cider vinegar. Set aside. In a separate large bowl, mix black beans, corn, feta, and green onion. Add vinagrette and cilantro and stir well. Refrigerate for several hours.

Makes enough dip or side dish for 4 - 6 people.
