Ingredients

5 C water

1t lemon pepper

1t cumin seed

1 chicken cleaned and rinsed

1t olive oil

1 mincedd garlic clove

1 C chopped onions

18 oz frozen white corn, thawed

2 4 oz cans diced green chilis

(do not drain)

1t ground cumin

2 to 3 T lime juice

2 cans great northern beans (do not drain)

2/3 C crushed tortilla chips

2/3 C shredded monterrey jack

8 oz green salsa

Preparation

in large pot combine water, lemon pepper and cumin and bring to boil. Add chicken, bring to boil, reduce heat and cook 45 minutes. Remove chicken, remove meat from bones and discard bones, dice and return to pot.

Saute garlic and onions in oil. Add garlic, onions, and all ingredients but beans to large pot and bring to boil. reduce heat, add beans, and cook until heated. Serve with tortilla chips, cheese, and green salsa.
