2 lbs chicken, cooked, cubed
3lbs white beans
1T olive oil
2 med onions
4t garlic, minced
3c grated cheese – cheddar or jack
2 - 4oz green chilies
2t cumin
1.5 t oregano
.25 t cayenne
4 -6 c canned chicken broth
Saute onion and garlic in olive oil. Add the rest of ingredients EXCEPT CHEESE. I use a lot LESS broth. Use less and add more at the end if you want it more soupy. Heat then add cheese to melt. I think the chili is bland without condiments. Serve with salsa, scallions, shredded cheese, cilantro, etc.
