Ingredients
1 lb ground chicken
1 white onion
1 can White Northern beans (14.5 oz)
1 1/2 tsp cumin
1 tsp Ancho chili pepper
1 tsp Chipotle chili pepper
1/2 tsp oregano
Pinch of ground bay leaves
1/2 tsp ground cinnamon
1 can chicken broth (14.5 oz)
2 - 4 sprigs of cilantro, finely chopped
Sour cream
Fresh cilantro
Shredded cheese (optional)
Preparation
In a large saucepan, saute onions and ground chicken in a tablespoon of butter or olive oil until thoroughly cooked. Add can of white northern beans to the mixture and simmer on medium heat for 8 - 10 minutes, or until almost boiling. Add cumin, ancho and chipotle spices, oregano, bay leaves and cinnamon. Add 1 can of chicken broth and bring to a boil. Cover saucepan and let simmer for another 5 minutes. Serve with a dollop of sour cream and garnish with fresh cilantro. Makes 2 large bowls. Enjoy!
