Ingredients

1 c chopped onion

2 T evoo

2 cloves garlic, minced

2 t cumin

1 t oregano

4 chicken breasts, cooked and chopped

2 cans shoepeg corn (undrained)

3 c chicken broth

1 t lemon pepper

1 (4 oz) can green chilis (undrained)

2 T lemon juice

1 (15 oz) can Northern Beans

May add Tabasco and chili powder.

Preparation

Cook onion in evoo until transparent. Add garlic. Add rest of ingredients.

Simmer at least 30 minutes.

Garnish with shredded Monterey Jack cheese and chopped cilantro, sour cream, and crushed Tostitos.
