Ingredients

2T vege oil

1 lb diced cooked chicken meat

1 chopped onion

2 cloves garlic, minced

1 14.5 oz can chicken broth

18.75 oz can tomatillos, drained and chopped

1 16 oz can diced tomatoes

1 7 oz can diced green chiles

1/2 tsp dried oregano

1/2 tsp ground coriander seed

1/4 tsp ground cumin

1 15 oz can white beans

2 ears corn or one can

salt to taste

pepper to taste

Preparation

Heat oil and cook onion and garlic until soft.

Stir in broth, tomatillos, tomatoes, chilis and spices. Bring to a boil, simmer 10 min.

Add corn, chicken and beans, simmer 5 minutes. Season with walt and pepper to taste.
