Ingredients
2 Tablespoons olive oil
1 Large Onion, diced
3 Cloves Garlic, minced
1 Jalapeno, seeded, deveined and minced
3 Cans White Kidney Beans, drained
2 Cups Chicken or Vegetable Broth
1 1/2 cups cooked chicken, cut into bit size pieces or 2 cans diced chicken.
¼-1/2 Teaspoon Cayenne Pepper
1/2 Teaspoon Oregano
1 ½ Teaspoons Cumin
1/2 Teaspoon Black Pepper
1/2 Teaspoon Salt
Preparation
Heat a pot over medium high heat. Add the oil. Then add the onion and sauté until soft. Add the jalapeno and cook for 2-3 minutes. Add the garlic and cook another minute. Add the rest of the ingredients and simmer for about 5-8 minutes. Serve with tortilla chips, cheddar cheese, salsa, or with a nice crusty bread. You can also eat them in a flour or corn tortilla.
