Ingredients

2&1/2 lbs sweet potatoes, peeled

1/4 cup brown sugar

3 tbsp butter

1 tbsp finely grated gingerroot

1 tsp salt

1/4 tsp pepper

a pinch of nutmeg

Preparation

Drop sweet potatoes into a pot of boiling salt water and boil for 45 minutes or so. Combine remaining ingredients and set aside. Drain potatoes and mash. Add seasonings and combine thoroughly. Whip with hand blender until smooth.
