Ingredients
12oz of penne or bowtie pasta(wheat)
1/4 of green AND red pepper chopped
5tbsp of extra virgin olive oil
3tbsp red wine vinegar
1/4 of a garlic clove chopped
1/4 one red onion
2tspn of salt
1/8 cup chopped fresh basil
3 ripe tomatos-seeded
2tspn black pepper
1tspn crushed red pepper
1/3 parmesean-shredded
4oz fresh mozarella
Preparation
combine tomatoes, onions, garlic, peppers, basil, salt and pepper with 3tbsp oil and 2tbsp vinegar and let marinate while pasta cooks. rinse cooked pasta in cold water, add ingrediants and then remainig oil, vinegar and cheese. toss and serve immediately or can refrigerate.
