Ingredients
¾ cup corn meal
1/3 cup bean flour
1 cup sweet rice and/or tapioca flour
½ tsp salt
½ tsp xanthan gum
1 tbsp baking powder
1 tsp baking soda
2 eggs
¼ cup oil
¼ cup honey or molasses
½ tsp vinegar
2 tbsp grated lemon peel
2/3 cup orange juice
Preparation
Whisk together dry ingredients. In a separate bowl, mix wet ingredients. Fold in dry mixture. Pour into muffin tins. Bake at 325º for 20 min.
