Ingredients
1 2-3 1b salmon, fileted, leave skin on
6 cloves garlic, finely chopped
3 TBSP minced parsley
2 TBSP olive oil
1 1/2 TBSP minced sundried tomatoes-oil packed
1/2 tsp salt
2 tsp grated lemon rind
Preparation
Combine all ingredients and leave to marinade overnight (Minimum 8 hours) Place salmon skin side down on barbecue and divide all marinade equally between filets. The fish should be completely covered. Cook on low heat with lid open until fish is done.
