Ingredients
2 x 400 gran tins of chopped tomatoes
4 cups vegetable stock
1 onion chopped
2 cloves garlic crushed
2 courgettes chopped
2 carrots chopped
2 sticks celery chopped
1 pinch dried chilli flakes
Salt and pepper to season
Half cup of peas or beans optional
Preparation
Chop all ingredients, cook in pot over medium heat for 20 minutes or until soft. Transfer to blender and purée until smooth. Return to pot to heat and add optional peas or beans. Cook until tender and serve.
