Ingredients
2 weetabix, crumbled
5 oz. light brown soft sugar
6 oz. mixed dried fruit
1/2 pint milk
1 egg, beaten
8 oz. self-raising flour
Preparation
- Place the weetabix, sugar, milk and fruit into a mixing bowl.
- Cover and leave overnight
- In the morning, add the beaten egg and the flour and mix well.
- Place the mixture into a lined loaf tin (2lb. size)
- Bake in the centre of the oven (362F) for about an hour.
- Test with a skewer to check that the cake is cooked and turn out onto a cooling rack.
When cool, slice, butter and enjoy
