Ingredients
1 1/2 cups yellow cornmeal
1/2 cup all purpose flour
1/2 cup sugar
1 tablespoon baking powder
1 cup plus 3 tablespoons buttermilk
1 cup frozen corn kernals, thawed
1/2 cup chopped onion
1 egg, beaten
vegetable oil for deep frying
Preparation
Mix first 4 ingredients in medium bowl. Add buttermilk, corn, onion and egg, stir until well combined. Cover and refrigerate overnight.
Pour oil into large saucepan to depth of 3" and heat to 375. Carefully drop some batter by scant tablespoonfuls into oil. Cook until golden brown, turning once, about 3 minutes. Transfer to apper towels and drain. Repeat with remaining batter in batches. Serve immediately.
