Ingredients

4 cups cubed watermelon

2T olive oil

3T lime juice

1T red wine vinegar

3/4 cup crumbled feta cheese

1/4 cup chopped fresh mint (optional)

Preparation

Cube watermelon and place in large mixing bowl. Whisk olive oil, lime juice and red wine vinegar together in small bowl and pour over watermelon. Toss gently to coat. Add salt & pepper to taste if desired. Gently stir in feta and mint. Serve immediately.
