Ingredients

1 pound watermelon pulp

1 cup plus 3 tablespoons sugar

juice of ½ lemon

mint leaves, for garnish

Preparation

In a bowl, mix the watermelon pulp with 1 cup of the sugar and let it stand for 10 minutes. Pass the mixture through a sieve or fine strainer into a metal bowl. Add the lemon juice. Put the bowl in the freezer. When the mixture begins to thicken (after about 30 minutes), whisk in 1 tablespoon of the remaining sugar and put the granita back in the freezer. Repeat the thickening and whisking in sugar steps twice more, until the mixture reaches the consistency of fine slush. Store in the freezer until serving.

Serve in cocktail glasses, garnished with the mint leaves.
