Ingredients
6 c chopped watermelon
2 c finely diced watermelon
1/2 med cuke, peeled, seeded and chopped, 1/2 finely diced
1/2 red pepper, seeded, cored and chopped, 1/2 finely diced
2 T minced shallot
1/4 c chopped fresh basil
1/4 c chopped flat leaf parsley
3 T red-wine vinegar
2 T evoo
3/4 t kosher salt
1/2 sm jalepeno, finely diced (optional)
Preparation
Place chopped veggies, herbs, vinegar, oil and salt into a blender and puree (may need to do this in batches). Transfer to a large bowl. Add diced veggies. Cool in fridge. Add jalepeno prior to servinge.
