Ingredients
800g watermelon (peeled, diced & seeded)
250g soft creamy feta cheese
24 pitted black olives
10 mint leaves (thinly sliced)
Finely grated zest of 2 limes
3 tbsps lime juice
60ml extra virgin olive oil
Salt & pepper to taste
Preparation
Put the watermelon, feta (break up in your hands so it’s crumbly) and olives in a salad bowl.
Dressing: put mint, lime juice, lime zest and olive oil in a jar with a lid. Shake it like a Polaroid picture! Or until combined.
Pour dressing over the salad, toss gently and season to taste.
