Ingredients

4 cups ( about 3 pounds) seedless watermelon, cut into 1-inch cubes

2 cups seedless cucumbers, peeled and cut into 1/2 inch cubes

2 tablespoons fresh lime juice

2 tablespoons extra-virgin olive oil

Kosher salt

1/4 cup chopped fresh mint

1 small bunch watercress, stemmed

1/4 cup pine nuts

Preparation

Put the watermelon and cucumbers in a large bowl. Whisk together the lime juice, olive oil and a pinch of salt in a small bowl. Pour over the watermelon mixture and toss to coat. Add the mint, watercress and pine nuts and toss again. Chill the salad for 1 hour before serving.
