Ingredients
1/4 c Champagne Vinegar
3 tsp. Sugar
1 tsp. Kosher Salt
1/4 tsp. Cayenne
1/2 Red Onion, thinly sliced
4 lbs Watermelon- 1 inch cubes
4 Beefsteak Tomatoes- 1 inch cubes
1/4 cup Olive Oil
1 cup Basil, loosely packed & ripped
1 cup Mint, loosely packed & torn
Kosher Salt & Pepper
Preparation
Whisk vinegar, sugar, salt, and cayenne. Soak onion in mixture about 30 minutes. Combine watermelon and tomatoes. Pour onions and vinegar and olive oil & toss. Add basil and mint then salt & pepper.
