Ingredients

1 tbsp canola oil

1 med onion (about 1.5 cups, diced

2 cloves garlic, minced

1 14 oz can artichoke hearts in water, drained & all liquid squeezed out

1 10 oz frozen chopped spinach, defrosted, drained & all liquid squeezed out

1/2 cup sour cream

2 tbsp mayonnaise

4 oz cream cheese

1/2 cup shredded sharp cheddar cheese

1/8 - 1/4 cup grated parmesan cheese

1 tsp lemon juice

1 tsp worcestershire sauce

salt & pepper

Preparation

  • Preheat oven to 375 F
  • Sautee onions over medium heat 6 to 7 minutes. Add garlic and cook another 2 to 3 minutes until onions are golden. Remove from heat and let cool.
  • In food processor combine all ingredients and process until smooth.
  • Lightly spray small rectangular baking dish and transfer mixture.
  • Bake for 15 to 20 minutes until heated through.
