Ingredients
1 pkg. refrigerated fresh ravioli (any flavor)
6 cups baby greens
1 torn head of radicchio
3 torn endives
1/2 c toasted pecans or walnuts
1/4 c blue cheese crumbles
1 c sliced strawberries
1/2 c orange or grapefruit segments
Dressing:
1/2 c olive oil
1/4 c balsalmic vinegar
salt and freshly ground pepper to taste
1 T of cinnamon
1 T of minced fresh rosemary
Preparation
Steam or boil ravioli according to package directions and drain.
Combine dressing ingredients in a small bowl.
Combine all items in a large salad bowl, dressing the salad sparingly. Enjoy with a toasted baguette spread with olive tapenade or cannelini bean hummus.
