Ingredients

3/4C Green Lentils

3T Olive Oil

3 Shallots

1 Carrot 1/4in dice

1 Celery Stalk 1/4in dice

1 Red Bell Pepper 1/4in dice

2t Flat leaf parsley

2T Balsamic vinegar

6oz Spinach Chopped

4oz Goat Cheese

Preparation

Bring saucepan to boil. Add lentils simmer 15min

Meanwhile heat the oil in a large skillet. Add shallots, cook until softened. Add carrots, celery, bell pepper cook until tender. Stir in parsley, vinegarand remaining oil.

Transfer to large bowl and add drained lentils and chopped spinach. Crumble goat cheese on top.
