Ingredients
2 T bacon fat
1 spanish onion, cut into large chunks
1 T minced garlic
1.5 bunches curly kale, ribs removed and leaves torn into bite size bits
1 can navy (cannelini) beans
1 - 2 T apple cider vinegar
1 T lemon juice
1/3 cup feta cheese
salt and pepper
Preparation
Fry the onion in the bacon grease until golden. Add the garlic and then the kale. Saute the kale until bright green and somewhat wilted (about 5 - 7 minutes) on medium heat, tossing frequently. Add beans and next 3 ingredients and toss until well mixed and heated through.
I would also consider serving this alongside roasted beets.
