Ingredients

1 - 1 1/2 lbs new potatoes

1/4 lb bacon

coarsely chopped onion and celery

1/2 t flour

1/2 t sugar

salt and pepper to taste

1/2 C water

1/2 C cider vinegar

Preparation

Cook potatoes till tender. Slice while warm. Fry bacon till almost crisp. Remove bacon, add onion and celery. Cook till tender, remove from pan. Drain all but 1 T bacon drippings, add dry ingredients. Stir till slightly brown. Add water and vinegar, cook till slightly thickened. Add back bacon, onion, and celery. Stir. Pour hot dressing over potatoes. Blend gently. Garnish w/ hard-boiled egg slices, parsley, chives…. Serve warm.
