2 oranges
3 tbsp sunflower oil
150g/5½oz shiitake mushrooms, stalks trimmed
225g/8ozs chestnut mushrooms, thickly sliced
150g/5½oz oyster mushrooms
2 tbsp sesame seeds
75g/3oz baby spinach leaves
Preparation
- Peel and segment one orange.
- Heat the oil in a large frying pan.
- Add the shiitake and chestnut mushrooms and cook for three minutes.
- Add the oyster mushrooms, cover and cook for a further two minutes.
- Add sesame seeds and grated rind and juice of remaining orange.
- Stir in the orange segments and spinach.
- Heat through, then serve immediately.
