2 oranges

3 tbsp sunflower oil

150g/5½oz shiitake mushrooms, stalks trimmed

225g/8ozs chestnut mushrooms, thickly sliced

150g/5½oz oyster mushrooms

2 tbsp sesame seeds

75g/3oz baby spinach leaves

Preparation

  1. Peel and segment one orange.
  2. Heat the oil in a large frying pan.
  3. Add the shiitake and chestnut mushrooms and cook for three minutes.
  4. Add the oyster mushrooms, cover and cook for a further two minutes.
  5. Add sesame seeds and grated rind and juice of remaining orange.
  6. Stir in the orange segments and spinach.
  7. Heat through, then serve immediately.
