Ingredients

thigh meat from one roasted chicken

3 slices bacon, chopped coarse

9 cooked baby potatoes

3 sliced roma (firm) tomatoes

1/4 cup chopped chives

2 cloves garlic - chopped fine

1/2 tsp chopped fresh dill

2 cups fresh baby spinach

2 squeezes fresh lemon juice

2 tbsp olive oil

salt and pepper

Preparation

cook bacon in a fry pan till half-cooked add potatoes, cook 2 minutes add chicken meat (in strips) 2 mins Add spinach, garlic, chives, dill, salt and pepper for 2 minutes Add tomatoes and lemon juice just enough to heat and then drizzle with olive oil and serve…..
