Ingredients

2 Chicken breasts

4 Shallots

Ricotta cheese

Fig spread

Shepherder’s bread (or any bread without a sour taste)

Preparation

Heat a pan and add olive oil. Sprinkle a little salt and pepper on the chicken, and put it in the pan to cook–make sure not to overcook it. Decide how you want to prepare the chicken–if you want it shredded, shred the chicken while it’s still hot. If you want to cube or dice the chicken, let it cool first.

Cut the shallots into half-inch sections, and put them in a hot pan with olive oil, and sprinkle on a little salt. Saute the shallots lightly, and add a bit of butter to the pan to finish them off. Add to the chicken.

Add ricotta cheese–you want a texture similar to chicken salad. Heat the mixture up if you need to–it should be warm.

Toast the bread, and put fig spread on one slice. Spread the chicken mixture on the other slice, and put the two slices of bread together.
